William Drabble, head chef of Aubergine, has left his position at the Michelin-starred restaurant to ‘pursue a new challenge’.

Having held the position of head chef since Gordon Ramsay’s departure in 1998, Drabble has retained Aubergine’s fine dining reputation and one Michelin star for almost a decade.

In a statement issued by the London Fine Dining Group, managing director Paul Singer said: “We wish (William) every future success and would like to thank him for all his past achievements on behalf of the group.”

He went on to tell BigHospitality that Drabble’s position at Aubergine would be filled internally. “London Fine Dining Group intend to promote existing chefs from within our talented team to fill the position made available by William`s departure,” he said.
