Michael Bremner to open second Brighton restaurant

Michael Bremner is to launch a follow-up to his highly regarded Brighton restaurant 64 Degrees.

The as-yet-unnamed restaurant is expected to open in late June, in the newly renovated arches on Brighton beach, close to the i360 observation tower.

The project is something of a homecoming for Bremner, who, prior to 64 Degrees, was the head chef at Due South, which was also located in the arches that run underneath King's Road. 

“My partner Carla (Grassy, co-owner of 64 Degrees) and I met on Brighton beach too, so it’s a special place for us. The council has put a lot of effort into making the area a bit more funky, I’m really excited about it,” says Bremner.

The restaurant will have about 40 covers inside and a similar number outside, and will be focused on brunch and lunch, although Bremner and his team may run special events in the evenings.

The food will be a little simpler than 64 Degrees, and will offer à la carte rather than small plates.

"There are a lot of high-end restaurants opening in Brighton, which is great," says Bremner. "A lot of chefs are trying to be the first in Brighton and Hove to get a Michelin star and someone will soon. But I think we are forgetting the need for more everyday restaurants. That’s the market we’ll be homing in on at this restaurant, it will be the sort of place you can take your kids to.”

The Scottish chef is also set to oversee the food at The Bison Arms, the upcoming pub from specialist Brighton beer shop Bison Beer.

Located at the point where The Lanes meets the seafront, the site has been delayed due to ongoing negotiations between the new landlord and current owner Whitbread.

“We’re hoping to open in time for some of the summer rush,” says Bremner. “We’ve designed the kitchen and we’re all ready to go, so it’s just a case of waiting for it to be sorted. It’s totally out of our hands.”

The site will include a 40-cover restaurant area that will offer a “new and exciting take on gastropub food”. Bremner's kitchen The Bison Arms is also likely to serve simpler, tapas-like dishes to customers in the bar area.

Bremner plans to initially spend the majority of his time at the Brighton beach restaurant with longstanding right hand man Sam Lambert running the kitchen at 64 Degrees and Josh Kitson overseeing the food at The Bison Arms. 

64 Degrees is a regular on Restaurant’s National Restaurant Awards, placing at number 16 last year. The tiny The Lanes restaurant was an early advocate of small plate dining and has received rave reviews from a number of national restaurant critics.
