ETM Group’s Aviary opens at the Montcalm Royal London House Hotel

Aviary, the latest restaurant and bar from the ETM Group, has opened on the 10th floor of the 253-bedroom Montcalm Royal London House, after first being announced in August.

As part of a trio of new sites from the ETM Group – including the other café, bar and restaurant in the Montcalm, newly-opened Burdock ‒ the 6,000 sq ft rooftop site offers a 70-cover roof terrace with heat lamps and fire pits, as well as a 150-cover restaurant and bar focusing on British meat and fish cooked on the cast iron Bertha coal oven.

Dishes include meat cuts and wild fish on the bone, cooked over charcoal at temperatures of up to 550°C. There will be sirloin on the bone, Ayrshire rose veal T-bone, Old Spot double chop, Shorthorn chateaubriand, pulled beef belly; and fish such as skate, monkfish, lemon sole, wild seabass, or half a lobster.

The menu also features a ‘raw’ section, including dishes such as cured trout with taramasalata; beef tartare with oyster dressing; or a platter of oysters, clams, trout, tuna, scallop and mackerel.

Side dishes will include flower sprouts and bacon, honey and cumin-glazed carrots, or thrice-cooked chips, plus confit duck egg, and griddled king prawns. There is also a wide choice of sauces, such as brown butter and caper, and truffled gravy.

Desserts are on the classic, British-European side, including the ‘After Eight’ Arctic roll; the sticky toffee pudding with spiced apple and vanilla ice cream; coconut panna cotta with passionfruit; or the chocolate and honeycomb sundae.

Cocktails – served from the large brass and timber island bar – will include original options, divided into categories such as Floral & Elegant, Tricks & Treats, Coppers & Sharing Pineapples, and Deep & Dirty.

Choices will include the High Heel Society, with gin, Champagne, cucumber and honey; the Sour Cherry Bomb, with vodka, Kamm & Sons, cherries and rhubarb bitters; plus the ‘sharing pineapples’ such as Jennings Steam Boat, with rum, pineapple, honey and lime.

A wide wine list offers most by the glass, plus an array of lager, craft beer, and the Long Arm Brewing Co variety on draught.

The site’s interior has been designed by the Russell Sage Studios, and features floor-to-ceiling windows, plus materials such as marble, antique mirror and timber, and a colour palette of gold, cream, brown, purple, orange and green.

There is a mix of seating, including suede and leather sofas and banquettes.

Aviary joins existing ETM Group site Burdock, a café and restaurant which opened in November, also in the Montcalm Royal House.

The ETM Group operates 11 sites across central and Greater London – including The Jugged Hare, The Hat and Tun, and the two Botanists in Sloane Square and Broadgate Circle ‒ plus The Six Bells pub in near Bury St Edmunds in Suffolk.

It announced three new openings in London, in August this year, which included the Aviary, Burdock, and the 11,000 sq ft Greenwood, which was set to open in the new Nova development in London Victoria.

The Montcalm Royal London House opened in early October, and is one of the five Montcalm hotels spread across the capital.
