Hackney restaurant Il Cudega to open September 2015
The venue, dedicated to dishes and produce from Italy's Lombardy region and originally earmarked to open in March, will open within one of three railway arches being developed just off Westgate Street as Fount London next month.
Open seven days a week from 8am until 6pm, Il Cudega will serve as both a café for sit-down meals and as a deli for takeaway produce.
It will also feature a Focaccia Bar where breads will be cooked throughout the day and served Genovese-style, either plain or with a topping of creamy Italian cheese crescenza.
Other dishes on the menu will include Farinata, a dish made of unleavened chickpea flour that can be eaten by itself or as a filling for the focaccia, Risotto Giallo alla Milanese, Osso Bucco and Zabaione and the venue will also sell own-branded bottles of wine such as Rosso di San Colombano, Lambrusco Mantovano and Verdea.
The business venture, which will be run be run by Brighi with support from Gaggioli, is aiming to be part of the community it operates in with 10 also per cent of all profits going towards community related activities and supporting food-related local charities.
A communal outdoor area, which will house a greenhouse growing vegetables for the restaurant and will be open for use by the local community, was paid for through a crowdfunding campaign which raised £14k.
