Hawksmoor teams up with Mitch Tonks for seafood element of latest restaurant

Will Beckett and Huw Gott have revealed they have teamed up with renowned fish chef and restaurateur Mitch Tonks for the seafood element of the next Hawksmoor restaurant which will give equal precedence to fish and beef.

Hawksmoor Air Street will open on 1 November in the redesigned 235-cover site overlooking Regent Street which was formerly home to Bruno Loubet's L'Odeon. As originally revealed by BigHospitality , the latest project will see the Hawksmoor brand move away from solely focusing on steak.

Beckett explained Tonks, a family friend, had worked with Hawksmoor head chef Richard Turner to develop the menu and would be setting up a supply line for fresh fish by developing direct relationships with fish suppliers.

"We opened our first restaurant when there were fewer high end steak restaurants and have tried, over the years to keep ahead of the burgeoning number of places offering ‘prime cuts, cocktails and a fantastic wine list’ by doing something a bit different each time – burgers, dogs and wings, ‘tour-of a-cow’ beef tasting menus and gargantuan breakfasts have all made an appearance. We’re incredibly excited to be opening a seafood and steak restaurant," he said.

The menu at Hawksmoor Air Street will feature charcoal-grilled turbot, monkfish, John Dory and Dover Sole alongside regular Hawksmoor dishes and a full wine list including more white options.
