Colbert, the new restaurant from The Wolseley and Delaunay owner Rex Restaurant Associates, is set to open its doors in Chelsea next month with Andrew Woodford as head chef and Daniel Craig as general manager.

As with Chris Corbin and Jeremy King's three other London restaurants, the 118-cover Colbert on Sloane Square, will take its inspiration from French pavement cafés, opening from breakfast through to dinner from mid-October.

Woodford, who has worked for Rex Restaurants for the last seven years, has created the all-day dining menu. He will be overseen by executive chef Lawrence Keogh, who joined The Wolseley as head chef in November last year​. 

Parisian menu

The menu includes a large selection of eggs, Croques, including Monsieur, Madame and Croque New York as well as traditional Parisian café dishes such as Salade de Magret Fumé, Bayonne Ham with Celeriac Rémoulade, Steak Diane, Moules Marinière and Cassoulet de Canard.

Head pastry chef Keiran McAuley will prepare a selection of breakfast patisseries, tartes and biscuits as well as ice creams. Colbert's restaurant manager Craig, will be assisted by Mathew Blakeley as assistant general manager. 

Interior

Shayne Brady of David Collins Studio was brought in to design the restaurant's interiors.

The three adjoining rooms of the Victorian building, formerly Oriel, has been kitted out to have the look and feel of a Parisian-inspired pavement café with Art Nouveau decorative arches, Victorian tiling, custom designed hand-crafted moulded glass chandeliers and wall lights, original French posters and vintage photograph. Chairs for the restaurant are a specially-made reproduction of a Thonet original. 

Colbert follows the opening of Corbin and King's Brasserie Zédel which opened in London's Sherwood Street earlier this year​ and will open its doors a year after they launched The Delaunay​. 

Corbin and King created Rex Restaurant Associates to manage the future expansion their company and to allow them to focus on new opportunities in London and abroad. The company is also set to open a new hotel in Mayfair, The Beaumont, in 2014.
