Rita's team to open Genovese Argentinian Canteen Quilombero

Missy Flynn and Gabriel Pryce of Hackney bar and restaurant Rita's are to open a new canteen-style restaurant at workspace campus Republic at East India Dock. 

The duo plan to run the new venture - Quilombero - as a café, coffee and juice bar by day, and restaurant by night. 

Opening temporarily at the new site, which is designed to be a hub for the creative and tech industries, Quilombero takes its inspiration from the Genovese migration from Italy to Argentina in the 1800s leading to Italian influence over the language and cuisine. 

Pryce has created a menu based around grilled meats, fish and homemade pasta and plans to roast whole fish from Billingsgate and joints of meat from Farmer Tom and Swaledale on the outdoor grill. Meats and fish will be served sharing style with fried potatoes and salsa verde.

During the day Quilombero will serve homemade breads, fresh focaccia and pastries for breakfast with lunch and dinner 'a simple offering' of three starters, three mains and three puddings. The restaurant will also run an aperitivo hour between 5pm-6pm with Italian and South American small plates including farinata, empanada and tostada.

 The wine list will be predominantly Italian natural wines and there will be a short, juice heavy cocktail list. 

Flynn and Pryce ran Rita's on Mare Street in Dalston with Deano Jo for three years. The venue, which started out as a 'late-night fried chicken restaurant above a nightclub' and became a popular food venture closed on 31 July with the team promising to pop up elsewhere in the future.
