Sat Bains aims for “delicious” burger with Shake Shack collaboration

Michelin-starred chef Sat Bains has collaborated with burger restaurant Shake Shack to release a Sherwood Forest-inspired limited edition burger, The Major Oak.

The burger, which is a Shack-blend Aberdeen Angus hamburger topped with blue cheese, Penny Bun mushroom ketchup, Red Oak Smoked Mayonaise, fresh Shallots and Pine, was on sale on Friday (9 October) at the chain’s Covent Garden restaurant with a limited run of 500 on offer to customers.

Bains told BigHospitality that he hoped to achieve “something really delicious” with the burger.

“When I was asked about the collaboration I thought wow, what a great way to get your own stamp on a burger,” he said.

“At the end of the day it’s a limited run, it’s a one-off, but we want to give you a taste of the East Midlands in a burger.”

Mark Rosati, culinary director of Shake Shack, said that the collaboration came about after he met Bains a few times.

“He came to Shake Shack in New York to eat our food and learn about what we did,” he told BigHospitality.

“We started thinking about fun ideas and then he brought this incredible concept to the table that has never happened before. He told us about the role of the Major Oak tree in Sherwood Forest and the Magna Carta, and how the tree had a big role that later impacted the U.S. Constitution.”
