Grilled cheese street food operation The Cheese Truck has started a crowdfunding campaign to help fund the brand's expansion into 'bricks and mortar'. 

The business, founded and run by Mathew Carver, is planning to open permanent restaurants in Deptford and Camden in London after operating from two converted 1970s Bedford ice cream vans for the last two years. 

So far the crowdfunding campaign on Crowdcube has raised £35k of its £100k target, with 25 days left to go. 

A champion of British cheese, Carver, who came up with the concept after a return from the States, toured music festivals in his van before making a name for himself. 

The Cheese Truck's first permanent site - Archie's Bar at Deptford Market Yard - has been self-funded and is due to open later this month. The 20-cover site will serve Cheese Truck's famous grilled cheese sandwiches featuring British cheeses and craft beers. 

Carver said it was the second site, at Camden's Stables Market where financial help was needed to pay for equipment and supply some working capital, so had turned to crowdfunding to be able to do so.  

"We’ve wanted to give our customers, fans and supporters a chance to invest in us for a long time now. As we’re embarking on the next step in our journey, moving from the streets to fixed premises, it felt like the right thing to do. I hope people get on-board with us and become part of The Cheese Truck family," he said. 

Designed by architects Kennedy Woods, The Cheese Bar in Camden will be a larger site than the Deptford one and will extend its menu to have a 'full cheese focus' said Carver with cocktails craft beer wines served alongside food. 

"They have designed an incredible interior to match the amazing food and drink - think marble counter tops and big display fridges full of cheese, we can't wait to share it," he said.
