Behind the scenes with Team UK at the World Pastry Cup

The team's practise sessions took place most weekends in a kitchen at the London outpost of training school Le Cordon Bleu - here Nicolas Belorgey and Javier Mercado practice pulled sugar ribbons.

As the team's ice expert, Nicolas Belorgey had to practice carving a sculpture out of a block of ice to fit on a table of 120 cm in diameter.

Using Valrhona chocolate, Nicolas Bouhelier was tasked with creating a chocolate sculpture measuring no more than 125 cm in height.

22 nations competed in the 13th Coupe du Monde de la Pâtisserie which was held in the 8,000 sq.m Paul Bocuse hall in front of cheering crowds and a worldwide audience watching the contest on TV or online.

The ten-hour competition began for the UK with the ice carving as Belorgey put his training into practice, chainsaw in hand.

While Bouhelier prepared the chocolate desserts, or entremets, using Valrhona's 'Grand Crus' range, Mercado began filling the moulds for the sugar creation.

The UK team came ninth this week in the 13th World Pastry Cup or Coupe du Monde de la Pâtisserie and were also awarded the prize for best poster - BigHospitality was given exclusive access to the team in training and competition for this special photo gallery.

France may have won the top prize in Lyon , followed by Japan and Italy, and the UK trio may have been disappointed with their placing , but the biennial contest helped showcase pastry chef talent from the UK and abroad, as this collection of images demonstrates.
