The Vegetarian Society`s 17th National Vegetarian Week starts today and here on BigHospitality we`ll be showing you how you can get involved and cater for the growing vegetarian market.
Every day this week you`ll be able to find a recipe donated by one of the nation`s top vegetarian chefs, find out who from the industry is doing what and why you should be catering for a market that comprises 8 per cent of the population.
Last year more than 1,400 businesses including pubs, caterers and retailers got involved with the event and this year hundreds of hospitality businesses are getting behind it, including The Saki Bar and Food Emporium in Smithfields and contract caterer Compass, who will be promoting the week at 300 staff canteens across the country.
Today, Chad Sarno, executive chef at London vegetarian and healthy eating restaurant Saf shares his recipe for Beetroot Ravioli , and if that doesn`t suit your diners then recipes from Modern Vegetarian author and chef Maria Elia, or Brighton vegetarian restaurant Terre a Terre just might.
