James Baker of British Airways has been announced as the Compass Junior Chef of the Year at a live cook-off at The Restaurant Show
The winner of the Compass group Junior Chef of the Year has this morning been announced as James Baker, Junior Sous Chef of British Airways, Heathrow.
Appearing this year at The Restaurant Show it was a case of third time lucky for the young chef who has been a finalist in the competition twice before, winning a bronze medal in 2004.
“Its great, I didn’t come to win and I’m still a bit shocked that I did. Its such a high competition, it was so close,” he said.
Alongside his Commis Chef Mark Findon, Baker cooked a three-course menu consisting of pan seared scallops, cauliflower puree and puy lentil vinaigrette to start; Gremolate lamb cannon with lamb croquette potato, white bean puree, braised shallot, baby vegetables and a port wine jus for the main; and a warm chocolate tart and white chocolate pannacotta with tangerine ice cream for dessert.
In second and third place were Alex Hindson from Milburns in Newcastle, and Alan Grieves of RBS Edinburgh respectively.
All chefs in the junior competition were required to be under the age of 23 and working within the Compass group. Stay tuned to BigHospitality for an update on the Senior heat of the competition which takes place this afternoon.
