Jason Wallace joins The Hawksmoor as Head Chef and ISS Eaton employs Andrew Chapell as Director of Operations.
Catering operator ISS Eaton has appointed Andrew Chappell its new Director of Operations for the UK.
Chappell (pictured right) has spent the last 11 years working as Group Operations Director and Business Dining & Senior Operations Director for two contract caterers.
ISS Eaton Managing Director Simon Titchener said: "With the changing economic outlook Andrew will undoubtedly be a huge asset in developing our UK operational strategy and taking us to the next level."
Underdog Group’s city-based steakhouse and cocktail bar, the Hawksmoor , has also employed Jason Wallace as its new Head Chef.
Wallace, who ran the kitchens at The Hurlingham Club as well as stints at The Great Eastern Hotel, the Assembly and The Worship, has introduced a new menu that remains focused on using the best quality British meat available.
A new wine list has also been drawn up by `drinks supremo` Nick Strangeway to match the new menu.
