This week BigHospitality, Restaurant magazine and 10 leading chefs embarked on a study tour of Torquay and Brixham in Devon to uncover the region’s produce.
Featuring a rainy fishing trip to catch mackerel off the coast of Torquay, which resulted in a 37-fish haul, a seven-course fish dinner at Simon Hulstone’s Michelin-starred restaurant The Elephant, and a 6am tour of Brixham fish market, the study tour was an invaluable experience for all.
Chefs explored the lengths fishermen go to daily to sustainably line-catch mackerel and the cost and effort involved in auctioning, filleting and shipping the fish to kitchens around the country.
With thanks to Hulstone and his kitchen brigade the chefs also enjoyed Devon’s seafood at its best.
