Cook: Bistro du Vin plans 12 London sites by 2015

Boutique hotel chain Hotel du Vin intends to grow its standalone Bistro du Vin concept to 12 sites by 2015 - concentrating only on London.

Following news this week that the chain has acquired the former site of Bjorn van der Horst’s Eastside Inn in Clerkenwell for its first London venue, Hotel du Vin chief executive Robert Cook spoke to BigHospitality’s Becky Paskin about the groups vision for the brand.

The decision to launch a chain of separate Bistro du Vin venues, he says, was down to difficulty acquiring capital for further hotel properties.
