A 10-hour documentary which looks behind the scenes at Spanish restaurant El Bulli is to be released on DVD next month with the aim of dispelling 'the myths and untruths' reported about the world's best restaurant

The DVD, which will be released in Spain before coming to the UK, is the result of 600 hours of filming and involved the work of 170 people at the restaurant in Roses.

"There are a lot of myths and stories about El Bulli," said chef/proprietor Ferran Adria. "This documentary will teach people what really happens there."

Speaking to BigHospitality at The Restaurant Show at Earls Court 2 in London today, Adria said he was always at the restaurant during the six months of the year it opened and was in London for one day only. He will be back at El Bulli tomorrow.

"People make a big effort to come and expect me to be there. If I'm not there it's not right. If you are not there you also can't develop your creativity," he said.

Although looking to remain at El Bulli, Adria said he was thinking of opening a tapas restaurant in collaboration with his brother Albert outside of Spain. "We are thinking about the concept. It would be more cultural than a business," he said.

Adria spoke to BigHospitality before taking part in a live interview with Restauarant magazine editor Paul Wootton where he talked about his rise to fame and how he has developed his cuisine and restaurant over the past 25 years.
