Ex Duck & Waffle chef to head kitchen at new London Fuller’s pub

A chef who previously worked at acclaimed London eatery Duck & Waffle has taken on the role of head chef at new Fuller’s pub the Sail Loft, Greenwich. 

Jacek Zywar, who previously worked under Daniel Doherty at Duck & Waffle on the 40th​ floor of London’s Heron Tower, will run the site’s kitchen serving two floors of diners.

Craig Allen, co-founder of hospitality recruiters the Change Group, which worked with Fuller’s to fill the role, said: “[Fuller’s] were keen to appoint someone that had worked at the highest level and that possessed an understanding and love of British food and seasonal ingredients, which would be evident in the menu.

Experience

“Jacek’s four years under Daniel Doherty at Duck & Waffle and previous experience in some well-known British restaurant kitchens made him the ideal candidate.”

Some of the dishes on offer at the Sail Loft include North Atlantic hake with roasted fennel, samphire, cockles, cider and butter sauce, braised ox cheek with bacon dumplings, kale, burnt onions and bread crumbs and smoked duck with Roquefort, poached pear, walnuts and watercress.

Desserts include apple and oat crumble with salted caramel custard, mini doughnuts with chocolate, hazelnuts and honeycomb and chocolate brownies with brown butter crumb and vanilla ice cream.

Publican

Fuller’s won the Best Food Offer (2+50 sites) award in 2015’s Publican Awards.

In November, the company reported food sales up by 8.3% across its managed estate for the first half of the 2015/16 financial year.
