John Burton Race will join Sanctum on the Green in Janury 2011

John Burton Race will join Mark Fuller’s boutique hotel Sanctum on the Green in Cookham Dean as consultant executive chef.

 

The celebrity chef, who also recently joined Boisdale Restaurants as consultant chef , will join the hotel and restaurant on 21 January 2011.

 

He has already created a new menu for the hotel’s restaurant, featuring locally sourced dishes such as Venison Carpaccio with Apricots and Port Wine Jelly; Pan-fried Bream with Saffron and Mussel Broth; and Saddle of Lamb with Smoked Paprika Crust served with Herb jus and Dried Bean Salad.

 

Fuller, whose Concept Venues group also owns Sanctum Soho Hotel in Piccadilly, said: “John is an old friend and we are very excited about this new partnership. He is one of the finest chefs of his generation, and this new collaboration is sure to be the first of many.”

 

Burton Race is best known for achieving two Michelin stars at the Landmark London, and for his time spent at The New Angel in Dartmouth, a property recently acquired by Alan Murchison and his 10 in 8 Fine Dining Group.

 

“I am drawn back to this beautiful part of the UK by the lovely memories from living here for 14 years,” said Burton Race. “Sanctum is a beautiful property and I feel my style of food will suit it perfectly”.

 

Sanctum on the Green relaunched in April this year after a refurbishment and transformation from country pub Inn on the Green.
