Matt Weedon joins Ellenborough Park as executive chef

Matt Weedon has been appointed executive chef at Ellenborough Park country house hotel in the Cotswolds.

In his new position the former Lords of the Manor chef will oversee all food and beverage operations at the property, including the three AA Rosette Beaufort Dining Room and the Brasserie.

He replaces David Kelman in the role,​ who has now left the hotel to join the Old Swan and Minster Mill near Oxford.

Ellenborough Park is the latest hotel dining position for Weedon, who won his first Michelin Star at Glenapp Castle in Scotland.

He then took on a role as executive chef at Lords of the Manor in the Cotswolds, where he was awarded a second Star in 2008.

His most recent position was at the three AA rosette Lamb Inn in Oxfordshire, which he took over alongside his wife.

“It is an amazing time to be both a chef and a customer in the Cotswolds and there is a push towards more relaxed dining, but still with that high expectation of quality synonymous with the region's people and many eateries,” said Weedon.

Ellenborough Park’s general manager Oliver Williams added that there were ‘exciting plans’ for the food offering at the 61-room hotel, which is set in the original Cheltenham Racecourse estate.
