Outlaw's Seafood Grill at The Capital will open in the hotel's refurbished dining room on 2 October and will serve 'simply prepared' seafood dishes by head chef Peter Biggs, who has worked with Outlaw for the past 10 years.
Outlaw, who currently has two restaurants at St Enodoc Hotel in Rock - Restaurant Nathan Outlaw and the Seafood & Grill - told BigHospitality he hadn't considered a London outpost until The Capital's owner David Levin suggested he take over the dining space at the hotel on a visit to his restaurant six months ago.
He said: "It was never part of my plan to open a restaurant in London, but I got talking to David when he came to eat at the restaurant and it coincided with Peter saying he would like to go back to London at some stage.
"I didn't want to do a fine-dining restaurant though and that's what The Capital has always been about, so didn't expect David to say 'yes' when I said I wanted to do something simpler."
Outlaw, who has championed Cornish seafood in his restaurants, wants to continue serving it in the 50-cover London restaurant. However, for the first time he will also serve fish from elsewhere. Fish and seafood will be driven up to London from Cornwall three times a week with the menu being supplemented by sustainably-caught fish from elsewhere in the UK.
Biggs will oversee the kitchen with Outlaw planning to spend one day a week with him in the capital. Diners have been told to expect dishes such as Cornish crab on toast, grilled lemon sole with potted brown shrimp butter, roast brill on-the-bone and whole Port Isaac lobster.
Outlaw said: "Peter's been with me for 10 years - he created Seafood & Grill in Rock so it's as much Peter's restaurant as it is mine. It makes sense for him to be there 100 per cent of the time. I will be there once a week to support him.
"There aren't many good British seafood restaurants in London and with a simpler focus using good ingredients we will hopefully offer something different to what's there already."
Booking will open for Outlaw's Seafood Grill at The Capital on 1 September before the restaurant opens for lunch and dinner on 2 October. Outlaw's team will also be responsible for serving breakfast and afternoon tea at the hotel.
