Five different chefs; five contrasting career paths; five distinct styles of cooking. Yet each of these hugely talented individuals share things in common. All are incredibly creative, each is highly ambitious and there is enough grit and determination between them to put a group of triathletes to shame. They are also the hottest property in the UK restaurant scene in 2012.

The chefs featured include Florence Knight, who heads up Polpetto; Tom Adams, co-founder of PittCue; Isaac McHale and James Lowe, aka The Young Turks; and Roganic’s former head chef Ben Spalding, who announced his departure from the restaurant on Saturday .

Also in the latest issue of the magazine: the duo behind all-day dining group Canteen discuss expansion, sourcing and the importance of great design; Andoni Luis Aduriz talks through his creative approach at celebrated Basque restaurant Mugaritz; and Restaurant analyse a range of essential new tableware products to set your restaurant apart from the competition.

For an insight into food-price fluctuations for the year ahead, an in-depth look at sparkling wine-based cocktails and more, pick up the April issue of Restaurant magazine in branches of WHSmith or subscribe for the year here .
