Frank Haasnoot, executive pastry chef at chocolate decorations manufacturer Dobla, has been named World Chocolate Master 2011 at the Salon du Chocolat Professionnel in Paris.

In second place in last week’s competition was Yoshiaki Uezaki from Patisserie KOSAI, while Haflidi Ragnarsson from Svalegardens Bageri & Konditori in Denmark finished third.

The fourth edition of the competition, organised by Callebaut, Cacao Barry and Carma, saw 19 leading chocolate and pastry chefs from around the world compete for the coveted title of World Chocolate Master.

This year’s theme was Cocoa: the gift of Quetzalcoatl. The candidates’ creations and recipes needed to reflect the atmosphere, the flavour and the taste connected with the early history of cocoa in South America.

Winning creation

Haasnoot’s winning creation (pictured) was entitled 'the warrior of darkness is in search for cocoa in the mysteries of the jungle'. While the creations are not designed to be eaten, all of their contents are edible.

The judging panel was headed by two jury co-presidents; leading French chocolatier and Meilleur Ouvrier de France Arnaud Lahrer and Jacquy Pfeiffer, award-winning French pastry chef from Alsace and co-founder of the renowned French Pastry School in Chicago. Shigeo Hirai, winner of the 2009 World Chocolate Masters Final was the honorary president.

The UK contestant was John Costello from Park Cake Bakery in Oldham. Costello competed at the UK selection held at the Restaurant Show in 2010 and battled against four other contestants for the title of UK Chocolate Master.
