The authors of a new book on British truffles believe many chefs are unaware of 'nature's best kept secret'
A new book has been launched by two truffle enthusiasts highlighting the culinary benefits of nature's best kept secret' - the British truffle.

The book has been co-authored by Marion Dean and Marion Pennington and is designed to dispel myths about the British truffle.

Dean, who trained her dog to hunt for truffles, tells her personal story as well as providing basic information and explaining the best time of year to find the British truffle and what to look for when foraging for them.

Fellow enthusiast Pennington has authored the truffle cuisine part of the book which features basic recipes and advanced cuisine - all the recipes are explained in detail with high-definition photography. Pennington's guide also covers care and preparation of truffles.

Speaking to BigHospitality, Dean said: "​I think the main USP of the book is that it is factual and accurate - those words are both unusual in the world of truffles.

"The summer truffle should be brought to the forefront of British cookery as it is our most abundant indigenous truffle.

"Many chefs have never experienced real truffles, never having come closer than a bottle of the dreaded artificial truffle oil, no more ‘truffly’ than the chemist shop it came from."
