Chef Matt Tebbutt is to oversee Hilton Bournemouth's restaurant Schpoons & Forx and its bar LEVEL8IGHT, The Sky Bar as part of a partnership deal between his company Matt Tebbutt Restaurants Limited and the 172-bedroom hotel. 

The hotel, which is being developed by THAT Group will open its doors in December in the centre of Bournemouth and will also include a spa and health club, ballroom and seven meeting spaces. 

Chef and TV presenter Tebbutt, who closed his restaurant The Foxhunter in Nantyderry in January to focus on his TV career, said he was looking forward to returning to the industry. 

"I have been eager to get back into the kitchen and launch something really exciting and innovative," he said. "This new partnership with Hilton Bournemouth will see us open an all-day restaurant and sky bar positioned as real destination venues in their own right.”

The partnership will see Tebbutt oversee the ground-floor 140-cover restaurant Schpoons & Forx, which will open all day from breakfast to dinner and focus on modern British sharing plates served from an open kitchen and bar LEVEL8IGHT, The Sky Bar. 

The 130-cover top-floor bar will overlook Bournemouth bay and will become the city's highest bar.  As well as offering a range of cocktails, spirits, craft beers and wines it will serve afternoon tea and bar snacks.  

Hilton Bournemouth general manager Cedric Horgnies said: "This exciting appointment will put our new hotel, along with the restaurant and bar, firmly on the map. Matt is well known for his television work, but we must also remember he is a proven talent and a serious chef and we are privileged to collaborate with him."
