The Detox Kitchen founder Lily Simpson has announced plans to open eight further healthy eating outlets in London bringing the total number to 10. 

The move, which will see the delis spring up over the next three years, follows a £2m investment led by London-based firm Encore Capital and Gymkhana co-founder Jyotin Sethi. 

Earmarked for Zone 1, the new establishments will take the format of Simpson’s flagship eatery, which opened in London’s Fitzrovia district earlier this year sporting an eat-in section, salad and juice bar alongside menu options including king prawn, quinoa, courgette and basil pesto and beetroot brownies.

Simpson founded the first Detox Kitchen take-out outlet in Soho’s Kingly Street in April 2014; the delis aim to make it easier for busy Londoners to access ‘delicious and natural food’ that is free from wheat, dairy and refined sugar.

“I am beyond thrilled to be working with Encore Capital to build and grow The Detox Kitchen,” Simpson said. “Since starting the company I have simply wanted to get more people eating and enjoying healthy food, and with their support we continue to do just that. This is a really exciting time for the business and for our customers.”
