Gordon Ramsay Holdings (GRH) has appointed Stuart Gillies as managing director of the group as part of a new management structure.

Gillies, who has been with GRH for ten years, will be responsible for managing restaurant operations.

The position of managing director is newly created for GRH, and follows the resignation of chief executive Chris Hutcheson last year.

It is part of a new management structure, that will see Gillies working alongside Mark Askew who heads up the fine dining operations and Geoff Eades, who is the interim finance director. All will report to Gordon who continues to oversee all operations.

GRH – new management structure

A spokesperson told BigHospitality that the position of chief executive is “not necessarily going to be filled” and that GRH will move forward under the new management structure. “The time is right to consolidate the management team,” said the spokesperson.

With both chef and restaurant management experience under his belt, Gillies had previously been heading up Gordon Ramsay Holdings’ Boxwood Café at the Berkely hotel, the Plane Food restaurant at Heathrow, and most recently he oversaw the opening of the Savoy Grill.

“Stuart is first and foremost a brilliant chef and has considerable experience managing restaurants and through the support of Geoff Eades and Mark Askew will help take the business forward,” said Gordon Ramsay.

“After an extremely successful opening of Savoy Grill, we’ve entered the new year in a strong position with the business performing well and we are really excited and confident about the future.”
