Aldo Zilli relaunches Soho restaurant as purely vegetarian

Aldo Zilli is relaunching his flagship Soho restaurant, Signor Zilli, as a vegetarian venture with a focus on healthy living next month

The 70-cover restaurant, rebranded as Zilli Green, will serve a sustainably sourced vegetarian menu devised by head chef Enzo di Marino, which will feature dishes inspired by worldwide cuisine.

 

Dishes include Lentil Cake with Steamed Baby Vegetables, Fried Fennel and Beetroot Oil; Marinated Seared Tofu with Asian Salad and Miso Soup; Thai Curry with Quinoa & Blood Orange Chutney; Black Truffle Lasagne; Dairy-free Tiramisu Cake and Peach and Mango Crème Brulee.

 

Zilli, who is famous for his use of meat and fish in traditional Italian dishes, said the change of direction was inspired by his time spent on Celebrity Fit Club.

 

“The programme inspired me to alter the focus of my cooking with new ingredients and different patterns of eating. This year marks my 30th anniversary as one of Soho's original restaurateurs. At the time, I brought a fresh new approach to eating Italian food to London and I want to mark this anniversary with an equally exciting new approach to a fresh and healthy way of life for everyone to enjoy.”

 

Zilli Green, which is due to open on 14 February, will also adopt several sustainable practices, including recycling where possible, only using fresh, seasonal and sustainable produce, and using recycled furnishings.
