Bluewater Wahaca becomes the first restaurant to receive RICS sustainable fit-out rating

The Bluewater site of Mexian restaurant chain Wahaca has been awarded a silver Ska rating from the Royal Institution of Chartered Surveyors (RICS) for a sustainable fit-out - the first restaurant to win such an award.

The new Kent venue achieved the award in the pilot scheme of the rating system and the venue scooped the prize after 80 per cent of the furnishings came from recycled material, and less energy and water was used in the fit-out. Among other sustainable measures in the fit-out, the design team used 6,500 recycled plastic bottles to form the restaurant’s ceiling.

Mark Selby, co-founder of Wahaca, said: "The Ska rating is an exciting measure which will enable us to properly assess our environmental credentials when it comes to fitting out our restaurants. Instead of moving into a new unit which is already energy efficient, Wahaca wanted to invest in making an old one more sustainable," he said. The Mexican chain was also among winners of the first Sustainable Restaurant Association (SRA) awards earlier this year .

The Ska rating for retail and restaurant fit-outs was launched by RICS earlier this year to assess retailers on their ability to reduce environmental impact, set standards, benchmark and improve sustainability best practices when fitting out or refurbishing a space. A similar system had already been available for office spaces.
