Chef Scott Smith takes over Edinburgh's Plumed Horse restaurant

Chef Scott Smith - a protégé of Geoffrey Smeddle, owner of the Michelin-starred The Peat Inn - is taking over the site of the former Plumed Horse in Edinburgh with a new restaurant Norn.

The 36-cover venue is named after an ancient Scottish language and will open in early May.

Scott will serve four and seven course set menus showcasing the best of Scottish produce.

Chefs will forage a proportion of ingredients themselves and will bring each dish to guest’s tables with a detailed explanation of the meal.

Sustainability is set to be at the heart of the restaurant, with un-used produce being preserved for later use.

Former Brawn sommelier Sandro Colavolpe will be curating the wine list, with bottles from small, artisanal producers.

Norn will open at 50-54 Henderson St, Edinburgh.
