Martin Morales, former DJ and founder of popular Peruvian restaurant Ceviche, is to open a pop-up restaurant in partnership with Virgin Atlantic at Heathrow Airport.

The venue opens in August and will be the first pop-up restaurant that the airline has operated. However the project marks a return to pop-up ventures for Morales whose Soho restaurant began its life as a temporary business.

"At Ceviche we love doing things people have never done before," Morales said. "Innovation is key in what we do, and above all, it’s fun to do new stuff.  We love serving Peruvian food and cocktails, so we are excited by our collaboration with Virgin Atlantic."

The restaurant will be available to the airline's Upper Class customers travelling through the Virgin Atlantic Clubhouse from 12 to 18 August. 

"This is the first restaurant pop-up with Virgin Atlantic, and we think the combination of our food with their outstanding Clubhouse is perfect. It’s only on for a week so it’s a real one off treat for us all,” Morales, who is also the Ceviche executive head chef, added.

Ceviche is the latest restaurant operator to team up with an airport or an airline as airside dining becomes more attractive to hospitality businesses looking to expand.

Jamie Oliver recently opened a 'ground-breaking' restaurant at Gatwick Airport​ combining three concepts, while both Heathrow​ and Manchester​ have turned to recent food trends by launching pop-up and street food ventures.

The Ceviche pop-up, which will be located in the Loft area of the lounge, will be open for two and a half hours over lunch and will serve a range of Peruvian dishes including the restaurant's renowned sea bass dish, Don Ceviche; so-called Drunk Scallops which are prepared with Pisco; and Ensalada de Quinoa (Quinoa cereal salad).

Mark Murphy, Virgin Atlantic’s Clubhouse Food and Beverage Executive, says: “Our aim at Virgin Atlantic is to constantly surprise our customers when they travel with us. Ceviche is famous for pioneering one of the most exciting cuisines around, and we are so pleased to be partnering with them to open the first ever pop-up restaurant in our Clubhouse at Heathrow.

"It’s our aim to offer Upper Class customers  an ever-changing experience, and this will give them the chance to enjoy the tastes of Lima with the buzz of Soho before they fly," he added.
