Wishart, who also operates the Michelin-starred Restaurant Martin Wishart in Leith and a second eponymous restaurant at Cameron House in Loch Lomond, named his latest restaurant after the Scottish Crown Jewels, known as the Honours of Scotland.
The Honours will be an informal, 60-cover, Parisian-inspired brasserie serving a French-Scottish menu devised by Wishart’s business partner and head chef Paul Tamburrini, previously of Hotel du Vin’s One Devonshire Gardens in Glasgow.
Wishart said: “Edinburgh is where I am from and I am delighted to be opening a contemporary brasserie in the New Town, in interpretation of the Parisian classic - a restaurant where traditional French cuisine meets the flavours of the Scottish market. The seasonal menu created by my business partner… and myself highlights the quality of fine ingredients served in a casual setting.”
The pair visited world renowned restaurants such as CUT in Singapore and Daniel in New York for inspiration for The Honours.
“Paul and I have spent a great deal of time researching the ambience, design and style of the restaurant, including visits to successful restaurants around the world we respect and aspire to,” Wishart added.
Steven Spear from Restaurant Martin Wishart will look after the front of house operation at The Honours.
Earlier this year Wishart told BigHospitality The Honours had been designed to roll out to additional locations.
