Sushisamba operator Samba Brands Management has announced it is to open Duck and Waffle, a 24-hour restaurant, at the Heron Tower in August.

Duck and Waffle will be the second restaurant at the Bishopsgate tower for the US-based operator after it opens the first Sushisamba in the UK next month​.

While Sushisamba will be the latest in the chain of Japanese, Brazilian and Peruvian fusion restaurants and will occupy the 38th and 39th floors of the building, Duck and Waffle is a brand new concept for the company and will take the 40th floor after a lease for the top-floor space was signed recently.

24-hours

Inspired by European and British influences, Duck and Waffle will have a tapas-style menu that changes throughout the day with a focus on dishes designed to be sampled and shared.

The restaurant will be open 24-hours a day in a bid to take advantage of the busy City of London location which can be viewed from the floor-to-ceiling windows in the venue.

The open kitchen will be headed up by British-born chef Daniel Doherty who has previously worked at The Empress restaurant in Victoria Park and Compass Group-owned Roux Fine Dining.

Evolve

The menus at Duck & Waffle are designed to evolve throughout the day starting with a breakfast offering from 6am-11am with dishes such as Foie Gras all-day breakfast with homemade nutella and jam, fresh brioche, pork dust and rice crispies.

An all-day menu will then be served till 2am in the morning with mains including Old Spot pork pie with smoked quail egg and British seafood pot
roast with n’duja and wild sea vegetables.

In the remaining four hours a late-night menu will be on offer featuring roasted Galloway Veal marrow bones with ox cheek marmalade, pickled girolles and parsley.

The restaurant will also feature a chef bar specialising in cocktails and rum and a private dining room.

Duck and Waffle will join Sushisamba and The Drift, a bar and restaurant from Drake & Morgan, which launched on the ground floor at the same time as the rest of the office building was opened last year​.
