BigHospitality followed the UK team - Simpson's head chef Adam Bennett and his commis chef Kristian Curtis, coach Nick Vadis, president Brian Turner and chairman John Williams - out to the competition at the international trade show Sirha at Lyon's Eurexpo on 30 January.
