The Factory House, a subterranean restaurant and bar celebrating ‘the age of modern industrialists’, is set to open in London’s Leadenhall Market next month.

The 180-cover restaurant is set to launch on 14 September, serving classic British dishes with an ‘innovative twist’, overseen by executive chef Sean Davies.

“The Factory House is heavily inspired by the excitement of the Victorian industrial age, when people were intrigued to experiment, innovate and try new things,” said Davies, who previously worked at the Tate restaurant.

“We look forward to welcoming people to enjoy excellently executed modern classics in a fun, hospitable and unique setting, whether they visit for a business lunch, late night drinks or a celebratory occasion.”

The Factory House’s design alludes to the Victorian age of innovation and industry, featuring machines and inventions from archives to echo the factory feel.

A helical staircase surrounds a free-standing glass shaft lift, down to a sweeping copper-faced bar and dining room. Other features of the basement area include antique train station clocks as wall sculptures; decorative gauges, pipe work and valves adorning the walls, and a Victorian coffee roaster which has been renovated as a functioning waiter station.

A central open grill and spit-roast sheltered by a corroded copper hood, will provide theatre for those dining, and the opening menu available from September to November 2012 will incorporate foraged and wild ingredients such as cob nuts, medlar plums, damsons, wood pigeon, guinea fowl and partridge.

  • Smoked eel cakes, mackerel mousse & watercress
  • Grilled wood pigeon with fig tart, prune & bacon rolls
  • Potted chicken liver and foie gras, gooseberry relish

Main courses

  • Fried goujons of flounder with samphire & shellfish mayonnaise
  • Guinea fowl with black pudding scotch eggs, artichoke puree & roasted medlar Plums
  • 12-hour cooked Lamb Shoulder

Desserts

  • Damson parfait
  • Blood orange posset with blood orange granite
  • Honey, plum and blackcurrant jelly with plum sorbet

Gourmet bar snacks such as bacon & thyme popcorn, Lancashire rarebits and gordal olives with orange sea salt & wild oregano complement the wine list and cocktail menu designed by the Fluid Movement.

The Fluid Movement, the team behind London bars Purl and Worship Street Whistling Shop, open their third venue - Dach & Sons,​a 70-cover speakeasy bar and restaurant - in Hampstead last month.
