The 245-bedrom hotel, operated by Marriott, has retained many of the building’s original features and now features two restaurants – the Booking Office and The Gilbert Scott, the latter of which is run by Marcus Wareing protégé Chantelle Nicholson.
BigHospitality’s Becky Paskin spoke with Wareing and took a tour of the hotel ahead of its grand opening on 5 May to find out how the new restaurant complements the history of the gothic London landmark.
