Malcolm John, chef patron of Le Cassoulet in Croydon and Le Vacherin in Chiswick, is to open a fourth restaurant in Sutton, Surrey on the former Smollensky’s Burger Shack site.
John, who has previously worked at London’s Bluebird Club and as executive sous chef alongside Herbert Berger at the Café Royal, will open the 80-cover restaurant at the beginning of December as Brasserie Vacherin Malcolm John.
Steve Darbon, director at Christie + Co who negotiated the sale, said: “We are delighted to have helped Malcolm John expand his estate of restaurants by introducing him to this well-located site. We are confident the restaurant will prove an instant success after its refurbishment and relaunch.”
John also owns Croydon’s Fish & Grill – Malcolm John, another former Smollensky’s site that was acquired by the chef last October.
