Already one of only six UK properties to be a member of the Leading Small Hotels of the World, the Ellington will have just 35 bedrooms, although each will have a 1950s art deco design with leather panelled wardrobes, Chesterfield armchairs, walnut trim and velvet padded headboards.

The Ellington will also offer guests the best in modern technology, with plasma screens, satellite TV, ipod docking station, three telephones, complimentary Wi-Fi, and entertainment centres capable of playing Xbox 360, Wii and PS3 games in every room.

The menu at the 56-seater restaurant, The Restaurant at The Ellington is the result of a collaboration with Albert Roux, and will use seasonal and where possible, local produce.

Roux commented: “I am delighted to be working with the team at The Ellington to bring a flavour of Classic Modern cuisine to this fantastic city.”

Chief Executive David Pantin founded the group after spells at Rocco Forte as Managing Director and Dawnay Shore as Chairman.

“I have built a team that shares my passion for hotel keeping,” he said. “They have all had previous experience in some of Europe’s leading hotels and many of them have worked with me previously. Together we want to create a guest experience that reflects the true art of hotel keeping through hospitality with warmth and first class service.”

“In each of our hotels, the accommodation and facilities will be specific to the individual building and location with a relevant sense of place.”

Pantin plans to open a number of boutique hotels in the near future, starting with their second Leeds property, The Crispin, which is due to launch in 2010.
