Aiden Byrne, Executive Chef of Danesfield House Hotel and Spa in Marlow, Buckinghamshire, is to be the Head Chef at the Dorchester's newly revamped Grill Room restaurant from November.
Henry Brosi will continue to work as Executive Chef of the Dorchester.
Byrne took up his position at Danesfield House a year ago and before that worked at Tom Aikens in Chelsea and Adlard's in Norwich. The Dorchester Grill's previous Head Chef, Ollie Couillard, is setting up Tom Aikens' more casual Tom's Kitchen for an autumn opening.
Despite persistent rumours that French chef Alain Ducasse is to take a site at the Dorchester, a spokesperson said she wasn't aware that this was happening.
