Less is now more at Le Manoir aux Quat'Saisons.
Chef patron Raymond Blanc has slashed the number of dishes on offer from 31 to 23 and put up prices.
Following a two-year study, Blanc has cut the à la carte menu to nine choices, introduced a five-course Classiques du Manoir menu at £95, and a ten-course Menu Découverte at £110.
"Guests don't want the predictable three-course menu when they're going out for a gourmet experience – they want it to be a journey of discovery," said Blanc.
"Now my chefs are working two hours less per day and we're more in line with the level of profits an establishment like this should have."
