Tian of Chicken with Coriander, Tomato, Avocado, Curly Endive, Raspberry Vinegar Reduction I have no idea why it is so popular. I guess that people read the description and think ‘that's exactly what I feel like'. It's a little salad-y dish, with the lemon on the chicken giving a real burst of flavour and it looks great. It's very fresh and very simple sounding but the vinegar throws people and gets their curiosity going. It's part of an Express Lunch we do of two courses at £16.95, which we guarantee will be delivered within an hour and may be another reason for its success.

Smoked Mackerel Mini Quiche They don't know what they're missing – that's what I say. There's not much to say about this one. It's very sad. I don't know why it didn't do well. I only sold about two.

I love it, that nice oily fish, strong flavour in filo pastry on a bed of rocket. It's not overcomplicated.

It's not because it's a quiche; I know that because the sun-dried tomato, goat's cheese and spinach was a big seller.

I think that smoked fish is a thing of the past. Or maybe it's because the Tian of Chicken came on instead.
