The founders of Arbutus in London's Soho are close to signing on their second central London site, which they hope will open in the old Drone's site in Mayfair in May or June.

The new, as yet unnamed site, will serve similar food to Arbutus for £25-30 a head.

Chef Anthony Demetre, formerly of Putney Bridge, said, "There'll be a different menu but we'll be trying to do what we've done with Arbutus and prove you don't need to spend £200 to have a good meal in London."

Colin Kelly, who currently works under Demetre at Michelin-starred Arbutus, will be Head Chef at the new site, while Demetre will be based at Arbutus. There will be 70 covers plus space for eating at the bar.

Demetre and business partner Will Smith opened Arbutus in Soho in May 2006.
