Spanish chef to take his London experience to bear in Spanish capital
Madrid-born David Muñoz, who has cheffed at Nobu Berkeley and Hakkasan, as well as doing a stage at el Bulli in Roses, has opened Chino-Mediterranean fusion restaurant Diverxo in Madrid.
Muñoz said he aims to introduce the Capital to the edgy combination of tastes he learned during his years of training. "There are so many restaurants in Madrid fusing Japanese and traditional Spanish food but I really want something different from the Adria way everyone is copying here. I want to break the mould."
Muñez added that Chinese food in Madrid "simply isn't that good", hence his desire to showcase his Spanish/Chinese creations.
Located in Francisco Medrano in the business district of Tetuan in Madrid, Diverxo will be open for lunch from Tuesday to Saturday and dinner every night of the week except Sunday. The menu will include Carrot Dim Sum Stuffed with Rabbit Meat, with Pickled Carrot, Carrot Foam, Purée and Salad and Egg Steamed with Lapsang Souchong Tea in a Toban Dish, Served with a Pickled Bamboo Garnish.
Muñoz did a four-month stage at El Bulli before moving to London to work in Nobu and Hakkasan.
