Inspired by the work of Ferran Adrià and Heston Blumenthal, Chef Sean Wilkinson is offering the North-East its first taste of molecular gastronomy with the newly opened Gourmet Spot in Durham.

Housed within owners' Raj and Roopal Naik's boutique city-centre hotel, Farnley Tower, the dark, contemporary restaurant offers only 24 covers.

Having arrived from nearby Middlesbrough restaurant Attitude, 34-year-old Wilkinson is ambitiously aiming for a Michelin star with a menu that includes Warm Yoghurt Noodles with Garlic Chips and Genetic Basil; Roast Foie Gras with Olive Oil Candy, Blood Orange Jelly and Sansho Cloud; and Nitro Ice with Hot Banana Foam and Curry Oil.

"Food as creative and experimental as this is a real first for the region," said Raj Naik. "We want to play with people's minds.

If they expect something to be hot it will be cold, and if they presume it will taste of apple it will be banana."
