Giancarlo and Katie Caldesi, who own two restaurants and a cooking school in Marylebone, London, have exchanged on a restaurant site in the culinary epi-centre of Bray in Berkshire in order to open an Italian restaurant in September.
Bray already houses two three Michelin-starred restaurants – Heston Blumenthal's The Fat Duck (opposite his Hinds' Head gastropub) and Michel Roux's Waterside Inn. However Giancarlo said he was not looking to compete, "It will be a challenge for me but I want to show the world that it's also possible to do fantastic Italian food without any fussiness." He added that it would probably be the last year he takes a cookery school in Italy.
Salvatore Fernadez and his Head Chef Steve Dowell own Slice Italian restaurant which the Caldesi's are moving into.
Fernandez said it hadn't been on the market, "but when someone makes you an offer you can't refuse, you don't refuse it".
