The spiel?

"It's a seasonal Italian influenced menu and we source quite a lot of products from Italy.

Obviously our house speciality is ravioli with a choice of fillings and sauces all of which are served in a relaxed environment," says Managing Director Thomas Proxa.

Which means?

There are nine types of ravioli, six sauces and two olive oils for which you pay a fi xed price for a small or large portion. Prices start at £5.25. For those who don't fancy ravioli, there are also paninis, salads, risottos and Italian style desserts available plus a takeaway menu.

Who's behind it?

It was Proxa's concept. He also owns Enigma Recruitment and Consultancy.

There are three other silent investors.

Would like to find?

The perfect ravioli recipe. "You can buy pasta in the supermarket and we want to create a pasta that gets away from that."

Would suit?

"It can suit everybody, from those who just want to take away a panini to those who want to sit down and spend £25-30 a person."

Ideal site?

Just off the high street of a town centre with good footfall. From 1,000 to 1,500 sq ft with a reasonable rent.

Future plans?

To open one or two more sites this year, possibly in Sutton or out of central London and expanding to 10-15 within four years, not including franchises abroad.

Why will this concept work?

"Because we are targeting most people. Italian food is extremely popular and we're using ingredients that are very health conscious such as olive oil not butter or trans fats. Everything is as light, fresh and healthy as possible."
