The Rosendale, Mark van der Goot's second gastropub after his critically-acclaimed The Greyhound in Battersea, The Rosendale in Dulwich, opening on July 1, will benefit from a huge outside space, seating 100 in the al fresco bar area, and a further 60 in the restaurant garden. This is a first for van der Goot. "The Greyhound does fantastically well in the winter, but for three really hot months every year, it's quiet." He doesn't see the Rosendale as an all-year space either, saying "I'm not a fan of sitting outside in the cold personally, but I can see why, particularly further into London where space is an issue, you might want to." He's sees the appeal of keeping the ‘summer property' and ‘winter property' separate.

He and his wife Sharlyn have designed it themselves predominantly (at slightly under 15 per cent of the total construction spend of £30k), including the nightmare of sourcing original street lamps from salvage yards. Decking extends as if from the interior floorboards, and will be furnished with lime green and ivory Italian fibreglass chairs from Hillcross furniture.

The side courtyard (for drinkers and smokers) is kitted out with Rhône red parasols and pub benches painted in white, black and brown: "I had so many chefs at a loose end while we planned the opening, they've mucked in with the painting." The chefs are considerably more excited about the kitchen garden, where they'll grow unusual vegetables like white carrots, and their own salads and cresses. "It brings them back to where they should be, not playing with foam guns," asserts van der Goot. The rest of the garden will be more easily managed with simple planting from Callings Nurseries in Kent, e.g. grasses. "You start out thinking it will be lovely, but realistically it has to be low maintenance."
