Restaurant Manager Pascal Cuny goes it alone in his first restaurant

Pascal Cuny, the former Restaurant Manager of Michelinstarred Jessica's restaurant in Edgbaston, Birmingham, has bought the restaurant after Head Chef Glynn Purnell left to open his own restaurant – Purnell's.

The former Jessica's will be re-named Pascal's and is set to open in early July. Cuny said, "I was supposed to go with Glynn originally to be his Restaurant Manager, but I had an old friend who kept saying ‘why don't you try running your own restaurant?' and when this came up I decided to go for it."

The restaurant is currently closed for a minor refurbishment but will retain its maximum of 40 covers on re-opening said Cuny, who will be Restaurant Manager as well as Owner at the restaurant.

Jenny Goss, formerly of Isobel's restaurant in Balsall Common, near Coventry, will be Head Chef.

The menu will be French brasseriestyle.

Cuny said, "We're not going for Michelin stars because when you enter into that you're working more for Michelin than anyone else. I wanted to do something a little bit simpler and more traditional, which is also my background." Previous owner Keith Stevenson has retired from the restaurant industry.

Purnell's fine dining restaurant will open in the centre of Birmingham's business district, also in July, with Purnell heading up the kitchen.
