Blackpool students named Nestlé Toque d'Or champions

A team of students from Blackpool and The Fylde College were named this year's Nestlé Toque d'Or champions.

Four young chefs from the college – Russell Lee, Mandy Riedel, Tony Bee and Graham Floyd – worked together to produce a three-course meal for 100 guests, which was served by front-of-house duo Ben Walsh and Stephen Bradley.

The students impressed the judges with their "innovative and wellexecuted menu" of Red Mullet and Pernod Soup, followed by Supreme of Guinea Fowl with Butternut Squash Risotto, Creamed Savoy Cabbage and Wild Mushroom Sauce.

This year, contestants had to create a sharing dessert using Nestlé confectionery products, for which the Blackpool team came up with an assiette of four desserts inspired by popular sweets like KitKat and Rolos.
