Iglu, the ‘ethical eatery' in Edinburgh, has introduced a training programme for its staff on all aspects of animal welfare in tandem with including information on its menus about the issue.

Iglu owner Charlie Cornelius says he organised the training so that staff can answer customers' questions about the provenance of ingredients.

When the restaurant opened two years ago, Cornelius implemented a ‘non-grazing' policy to promote the welfare of wild animals and their forest habitats. Since then it has introduced a number of vegetarian dishes, wild and sustainable fish and more game options to the menu, as well as aimed to use local suppliers.
