Are you aware of lasagne? If you are, and we're sure you are, you're half way there. It may sound like a peculiarly daft American initiative but maybe there's something in it. After all, it's been years since lasagne was taken seriously on a menu, in spite of the fact that in ready meal form, this hearty Italian dish still outsells chicken tikka masala by nearly two to one. Don't dismiss it simply as a ‘70s throwback – far more modern to serve a ‘deconstructed' lasagne (a close cousin of the open raviolo or unfurled cannelloni presumably) as seen at the likes of Nick's Restaurant in Oakham.
